With 90% Sangiovese and a small amount of Canaiolo, the Terre di Corzano Chianti DOCG 2023 from Corzano e Paterno is a classic example of its kind. After harvesting at full phenological ripeness, the grapes were fermented in stainless steel tanks and then underwent malolactic fermentation before being transferred to used barriques and tonneaux as well as large wooden barrels (25 and 40 hectoliters) for 14 months of aging. After bottle aging, the Chianti was bottled and is now ready to perfectly fulfill its role as a table wine. The Corzano e Paterno Terre di Corzano Chianti DOCG has a ruby red color with moderate intensity in the glass—classic Chianti wines are never jet black. It has aromas of red fruits, especially sour cherry and balsamic notes, but also dried olives and a hint of Mediterranean spice. On the palate, it has a delicate acidity and finely structured tannins. With a little air, this Chianti is an all-rounder that goes well with all dishes of Tuscan cuisine – whether country bread with culatello, pancetta, salami or roasted game birds, but also with various cheeses.
