Alexis Hudon, originally from Quebec, started working as a sommelier and served wine for 10 years in two of the best natural wine bars in Paris. Hudon established his own cellar space in 2019 and purchased his first six hectares of vines in 2021, making him one of the youngest natural winemakers on the scene.
This vintage is made of Gamay & Gamay Teinturier. A light-bodied red with crunchy, juicy cherry fruit and vibrant acidity. Smooth, easy-drinking, peppery finish. Great with poultry or, of course, a round of cheeses.
This red wine from grape variety Grignolino is a fragrant everyday red with light peppery notes as well as fruity ones recalling cherries and raspberries.
Aged in a steel tank, it is under the domain of the Italian / Irish producers Maurizio and Deirdre, who make up the small Cascina Val Liberata in Piemonte in the north of Italy.

Tank 35 is made from 100% Riesling grapes. The vines on the Eckelsheim, Germany vineyard run deep through red sandstone soil.
It's made the old-school way: low intervention in the cellar and a small amount of sulfites added. Then it's fermented and aged in a 1000 litre fibre glass tank.
This wine is oxidised Riesling from 2019 and tastes almost like a Jura with good strength and character. Nutty, rich, fresh acidity, bold and delicious.

This is an exotic Silvaner, with a creamy mouthfeel, fresh and elegant with a lightly stewed tea characteristic. There are some hints of CO2 on the tongue from the maceration, which lift off with a little exposure to oxygen. The grapes come from Andi Mann's vineyard in Eckelsheim, from 25 year old vines on sandstone soil. Whole bunches of grapes were transferred into a tank and left to undergo full carbonic maceration for 3 weeks.
Derrumbes third expression is a mezcal from the desert produced exclusively from the extensive wild agave Salmiana Crassispina that grows naturally in the High Plateau of San Luis Potosi. With not enough trees to support mezcal production, Maestro mezcalero Manuel Perez forages for dry Salmiana leaves and quiotes to use as fuel. The result is an incredibly unique mezcal that reflects the flavors of its surroundings like no other. This floral and herbaceous mezcal from the village of Charcas has just the right touch of sweetness to balance its delicate intensity.

Derrumbes Durango is produced in the remote village of Nombre de Dios in the northern Mexican state. It is a varietal made exclusively of Durango’s endemic agave Durangensis and it represents yet another expression from the Derrumbes family distilled in unique wood and copper stills, this one however, has a neck for external condensation. Maestro mezcalero Uriel Simental delivers this exciting balance of summer fruit, nuts and dry minerality that finishes seamlessly with a beautiful light smokiness.
Karla and Jakub of Czech winemaker Syfany are masters at blending multiple varieties and this wine is no exception. The Beast is a blend of 3-week macerated Gewürztraminer and shortly macerated Chardonnay. Tropical, fun, playful orange wine with smooth tannins. Great with spicy dishes, Thai or Indian cuisine.

On the 29th of September 2022, winemakers Daisy Merrick and Antoine Lucchesi picked the Riesling grapes from Weingut Achenbach in Neu Bamberg, Rheinhessen from 30+ year old vines on sandstone soil.
This wine has been bottled with some residual sugar (as fermentation was slow in 2022), so you may hear a small 'pop' when you open the bottle with some delicate effervescence tickling your tongue.
It has some great acidity and richness in the mouth from the barrel aging. Almost like brioche on the palate with some caramel notes, it is an interesting Riesling to discover. Drink now or age it longer in the bottle for 1 - 3 years to experience its full potential.

This directly pressed Dornfelder creates a light, juicy, fresh red wine. It's rich in colour as Dornfelder has thick skins, but the mouthfeel is light and friendly. You can pair tank 13 with roast chicken, pizza, grilled fish, or baked aubergines. Best served slightly chilled.
Espina Roja is made by female producer Ariana Buendia and is an extraordinary example of what can be achieved when younger producers take on their family heritage. The brand name comes from the vibrant red thorns that the agave wilds to protect itself. Only 250 liters were bottled, making it a super limited edition batch.
Cultivated agave between 8 and 12 years of age Maguey, locally known as Alto (Agave Inaquidens) is harvested within 8 days. It is then cooked for a total of 10 days in a conical oven pit covered with volcanic stone and ground by hand with a wooden club. The fermentation is executed for 11 days in tepetate pits to which the pulque is added with natural spring water. It is then distilled in a Filipino Alembic made of fir wood.
Notes are mineral and woody with subtle lactic nuances.
