Stefan Becker and Thorsten Konrad wanted to create a new, modern aperitif, far removed from the romance of Italian country inns - ODE. They macerated various kinds of bark, herbs, and fruits until the essences obtained perfectly captured the taste of the original ingredient. For their debut ODE Bright Lemon, Amalfi lemons, bergamot, cedar, peaches, thyme, artichoke, jasmine, and sea salt were used. Stefan and Thorsten also developed a Riesling that is perfectly matched to their aperitif. Add a little beet sugar and the ODE Natural Aperitif Bright Lemon was ready - a citrus-heavy, bittersweet summer in bottles. The bottle is topped with a sun-yellow wooden lemon to function as a stylish closure. Opening it also becomes a haptic experience.
ODE is the perfect base for a spritz cocktail with ice-cold Prosecco.
Alexis Hudon, originally from Quebec, started working as a sommelier and served wine for 10 years in two of the best natural wine bars in Paris. Hudon established his own cellar space in 2019 and purchased his first six hectares of vines in 2021, making him one of the youngest natural winemakers on the scene.
This vintage is made of Gamay & Gamay Teinturier. A light-bodied red with crunchy, juicy cherry fruit and vibrant acidity. Smooth, easy-drinking, peppery finish. Great with poultry or, of course, a round of cheeses.
The grapes are from 40 year old vines on clay and calcareous soil from Weingut Nägele in Baden. After picking, they were left in the cold overnight performing a cold maceration. The next day they were pressed and the juice was transferred into 500L barrels to ferment and age.
This year the winemakers Antoine Lucchesi and Daisy Merrick have decided not to disgorge the wine. Meaning the yeast particles are still inside the bottle. Therefore your wine may look a little cloudy.
The notes are of green apple, with creamy mouthfeel, lots of little bubbles all over the tongue, slightly wild.
IMPORTANT / WHAT TO KNOW BEFORE OPENING THE BOTTLE:
This is an exotic Silvaner, with a creamy mouthfeel, fresh and elegant with a lightly stewed tea characteristic. There are some hints of CO2 on the tongue from the maceration, which lift off with a little exposure to oxygen. The grapes come from Andi Mann's vineyard in Eckelsheim, from 25 year old vines on sandstone soil. Whole bunches of grapes were transferred into a tank and left to undergo full carbonic maceration for 3 weeks.
The queen of non-alcoholic beverages, Manufaktur Jörg Geiger's alcohol-free Sekt is refined, not at all sweet, yet still 0%. It is made from the heirloom pear variety 'Champagner Bratbirne' grown on 100-year-old trees, bottle-fermented, and matured three years before being dealcoholized.
Aroma: roasted pears, with subtle notes of dried pears. White flowers, notes of brioche shaped by the sparkling wine's several years of yeast storage in the bottle. Taste: Restrained sweetness and well-integrated acidity. The fine taste of the champagne roasted pear with subtle tannin notes in the fine aftertaste. For over 200 years, the variety 'Champagner Bratbirne' has been regarded as a wine pear of the very first rank. It has borne its name since 1797 because an outstanding sparkling wine was made from this rarity since then.
Drink it in a champagne glass, solo or mixed as aperitif. Recommended drinking temperature: 8 to 10°C
MISIONES Coffee Farm was founded 100 years ago south of Bogotá Colombia. The farm produced 600 tons of coffee, which was transported to the Magdalena River ports by mule. From there it was shipped abroad. MISIONES is one of the few farms in the country to still have intact historic machinery originally brought from Glasgow, Scotland. Today it provides green coffee for roasters as well as its own line coffees for consumers, roasted in Berlin. The coffees are omni-roasted, so you can use them for filter or espresso.

The Dittany herb was known in ancient Crete for as an aphrodisiac loose herbal tea and named Erodas by the locals, which means youthful love. The young men would climb on steep slopes to collect it for their beloved ones as an act of love.
Dittany (Origanum dictamnus) is the most famous Cretan endemic plants and the only plant which grows only in Crete. It grows on steep cliffs, so its collection is dangerous. Apart from excellent herbal tea, this organic herbal infusion was known in ancient times for its healing qualities. It was considered the most effective local remedy for almost everything (sore throat, cough, menstrual cramps, aching stomach, hypertensive, diuretic, helps at child birth, cures wounds, etc.).
